My name is Anjali Arora, & I am a celiac & the founder of this site. Gluten Watchers is aimed at people suffering from food allergies, primarily gluten, wheat & related lactose intolerance. While the number of diagnosed celiacs is on the rise, we know that this is just the tip of the iceberg. For the people that are lucky enough to be diagnosed, as I was, it is a challenge to stick to a gluten-free diet day after day. The challenges are multiplied when one is traveling or visiting a new place, because all familiar markers break down then. This site hopes to bring you information that will make it easier to lead a gluten-free existence, & to get information about celiac disease, support groups & more.

We are also hoping this site will be useful for conditions where a gluten & casein free diet has been advised by your doctors, such as with autism.

My own philosophy, especially after being diagnosed late last year, has been that the safest food is the one you have cooked from scratch. It is unbelievable how many hidden sources of gluten there are in our modern-day existence. So towards encouraging all of you to cook your own healthy meals, I will be sharing my recipes in the Recipes section. (Since I am totally vegetarian, I apologize for the lack of meat & such recipes here, but I promise to soon have the ability for you to send in your favorite recipes to this site). For these recipes, I am delving into my own culinary heritage to use nutritious & unbelievably powerful vegetables, herbs & more to induce & maintain healing.

This site is an evolving, growing document, that depends on all of you to participate & help put together a rich resource that will bring health & information to all who need it.
