Red Kidney Bean Salad

Enjoy this yummy kidney bean salad with the goodness of tomatoes, onions & more. Makes a filling lunch or snack.
Ingredients:
2 cups boiled kidney beans ( or use canned beans instead)
2 scallions, finely chopped
1 small red onion, finely chopped
1 jalapeno pepper, deseeded & finely chopped (optional)
3 tbsp tomato paste
1/2 tsp each of mustard seeds, cumin seeds
1 tsp each of turmeric powder, red pepper powder, cumin-coriander powder
Salt & pepper to taste
1 tbsp cooking oil
- Heat the oil; add the mustard, cumin seeds & chopped jalapeno; saute´ for a minute or two;
- Add the boiled beans, the dry curry powders ( turmeric, red pepper & coriander-cumin), tomato paste, & salt & pepper;
- Stir & simmer on low heat for 5 minutes;
- Turn off heat, add lemon juice & the chopped scallions & onions;
- Mix well & garnish with coriander leaves
- Serve warm or cold
