A resistant starch is a starch that functions similar to fiber. Typically when you ingest food it begins to breakdown in the stomach and small intestines. Food that is a resistant starch makes it all the way through the stomach and small intestines and doesn't begin to breakdown until it reaches the large intestines. This is how it gets the name resistant because it resists digestion. Resistant starch is noted to have multiple health benefits.
