Straw-Blue Cobbler
This is a quick easy recipe that can satisfy the entire families palate.
Straw-Blue Cobbler
Ingredients:
Filling:
Pastry:
Directions:
1. Preheat oven to 375 degrees.
2. Mix all filling ingredients well into a large bowl.
3. After mixed well, place in a greased 11 x 7 baking dish.
4. Take thawed pastry sheet and lay over top of filling, it should cover entire surface.
5. Cut slices on top pastry sheet to allow steam and release for filling.
6. Place in oven for approximately 45 minutes, or until top is golden brown.
7. Remove from oven and enjoy!
Note: You can make your own pastry topping, but I was in a hurry and had this on hand.

- 1 bag (12 oz) frozen blueberries, thawed
- 1 bag (12 oz) frozen strawberries, thawed (chop or smash up to smaller pieces)
- 3/4 cup sugar (you can decrease
- 1/4 cup water
- 3 Tbsp cornstarch or arrowroot
- 4 Tbsp gluten-free flour (I used 2 Tbsp cassava flour and 2 Tbsp almond flour)
Pastry:
- 1/2 of 1 package of Geefree puff pastry sheet (9 oz used in recipe)
