Walnut Meal/Flour
Walnut meal/flour comes from finely ground walnuts. Walnuts resemble miniature brains and for good reason since they are considered to be brain food. Walnut flour is great to combine with other gluten-free flours and will add some great nutrients to your dishes.
Uses: Biscuits, breads, cakes, cookies, muffins, pancakes Key Nutrients: Protein, fiber, vitamin A, vitamin C, vitamin K, B-vitamins, calcium, copper, iron, magnesium, manganese, phosphorus, selenium, zinc How To Make Your Own: Take raw walnuts, place in high output blender, food processor, or coffee grinder and grind until fine. Keep a close eye on it because if you blend too long it will turn into cashew butter. You may have clumps that you can separate with your fingers. |

Note: Walnut meal can be made easily by taking raw walnuts and grinding in high output blender or food processor to desired consistency. Just don’t over grind because it will turn into walnut butter instead of meal.

Ingredients:
- 1 cup walnut meal, see note
- 6 dates, soaked
- 2 tablespoons cocoa, measures
- 2 tablespoons agave nectar, or preferred sweetener
- 1 teaspoon vanilla extract
- 2 tablespoons avocado oil, or preferred oil
- 3 tablespoons water
Directions:
- Take walnut meal and place in blender or food processor.
- Add dates, one at a time, grinding each until you can't tell they're there.
- Add cocoa, sweetener of choice & vanilla, & then, while continuing to process, add alternately a little oil & then a little water, until you reach the consistency that you want ~ ALL ingredient measurements are rough estimates only!
- Serve with favorite fruit slices!
